Well, the first days are the hardest days...  

With humble roots at craft fairs and Saturday morning farmers markets to slinging spuds at all-night music festivals,

in 2016 we didn’t get to sleep some nights ‘til the morning came around!  But together, more or less in line,  

we just kept trucking on and in 2018,  established residency at Congdons food truck park a great place to settle down easy.

We have found our home here in Maine - including two amazing, safe and successful "pandemic" seasons!

Lately, it occurs to me, what a long strange trip it’s been! 

Though all the years combine, they melt into a dream,

the Knew Potato Caboose is Built to Last.
